Happy Happy Knitting

I currently have a few projects I'm working on
First off, I have my slipppers knitted up and ready to felt:
Since I live in an apartment and don't have a washer I will have to wait till Thursday to go to my Mom's house to get them done there.

I'm getting started on a new scarf, one which I don't spend very much time on just 5 or 10 minutes here and there.

I got the pattern for a super cute clutch, I plan on making lots of these and lining them with some awesome fabric. They should turn out nicely.

These were my last minute scarves I made before Christmas for my in-laws, thank goodness they loved them.

I have another project that I intend to complete one of these days, I'll work on it for a while and get excited about it then I get tried of it and put it aside and forget about it for a few months. I need to start working on it more so I can have it done before my son gets too old to use it.

Next Chrismas here we go.........

I finally got started on my french press slippers. I will be making tons of them whenever I get time. I also have beanies and scarves to make. I figured if I get started now I will get done super early with time to spare. No stress. That's the way I like to do things. Plus I don't know how much time I will have to knit once the baby is born. So really that gives me till May to get most of what I want done. That shouldn't be to difficult. I guess it's only a matter of having the money to buy the yarn I need.

Lunch Time

Some days I just can't find anything that I want to eat, or I can't find anything to make so I end p throwing whatever I can find together and hope that it comes out good. Well, I've been a food shortage lately so I've been a little experimental. Yesterday I found some frozen spinach and a can of artichoke hearts, and thought "I'll make some sort of stuffed chicken" So I proceeded to find what else I cold throw in the mix. I thawed and squeezed the spinach and mixed in about 3 or for small cloves of minced garlic, about a cup of shredded Monterrey jack cheese and about 1/4 cup of Parmesan cheese. With the artichoke hearts I cut off the meaty part diced it and mixed it in with the spinach mix. With the leafy part of the hearts I chopped them and drained them on some paper towels. Then I mixed the chopped and dried artichokes with about a half cup of mayo and a half cup of sour cream 3 small cloves of minced garlic salt and pepper. So then I took my chicken breast cut a pocket into it and stuffed it with the spinach mixture. The I coated it with the artichoke mixture and then rolled it in Italian bread crumbs. Bake it in a 375 degree oven for about 35 minutes. It was delicious.

I ended up having some of both the spinach and artichoke mixtures left over so today I was at it agian. I thawed out some more chicken to start (cause I figured I can always throw chicken in whatever I make) Then put my creative cooking brain to work. I had some cheese raviolis in the freezer so I thought why not make some sort of sauce. I started with a basic white sauce(butter, flour and milk) Added about 3/4 cup of Monterrey jack cheese, some salt, pepper, little garlic powder and about a 1/4 cup of mild cheedar cheese. Then I thought what the heck am I going to do with the rest of the stuff from yesterday. DUH! I added the leftover mixtures from yesterday to the sauce and more milk. Turn out to be a creamy cheesy spinach artichoke sauce. Not Bad. I poured that over the ravioli and the sliced up the chicken seasoned it with salt pepper and lemon pepper. Browned it in a pan and threw that on top on the whole dish. It was surprisingly divine!

French Press Felted Slippers!

Yay! I just got the pattern (thanks babe for my early Christmas present) Now I just need to go get some yarn and get started!!! These are so cute I highly recommend everyone buy the pattern, they will make great Christmas presents! Thank you French Press Knits!

Knuckles!

I got two pairs of these little gloves at Wal-mart for a buck, but they just weren't good enough for me. So I did what I do best and took something and made it better. I love the way they came out. I put them on Josiah to make sure I had cut the fingers down enough and he cried when I took them off. He loved them! He kept look at his hands and smiling. So once they dry I will let him wear them as much as he wants.

They were super easy to make. All I did was cut the fingers off, then thought of a saying to put on the knuckles. I went to dafont.com and found a font that I like and used Polymark Fabric Paint in Bright White to copy the letters as best I could. Das ist alles!

Holiday Tragedy.

I just found out my friends house got broken into yesterday while her and her husband were at work. The thieves took everything they could carry , including their x-box 360, wii, all the games, a few movies, laptop, digital camera(worth over $1000), spare car and house keys, and ALL THE CHRISTMAS PRESENTS UNDER THE TREE!! They had so much time in the house they went through all the closets. I don't understand how someone could do that. It's so frustrating!! Now she is scared to even be in her house and wants to move. She even had to cancel her Christmas party for this Saturday. I wish there was something I could do to help them out.

New Delicious Project

I just had a thought for a new crochet project. I don't want to give it away, but it will be delicious. ")

On side note:
I have been looking for a cute tiny flower pattern and
I finally found them!!!
They are my favorite! Can't wait to make a ton to add to some of my stuff!

YUMMY

I just had the perfect snack, a big glass of chocolate milk and strawberries. I haven't really felt like eating the last couple of days so actually finding something that sounds good to eat was rewarding.

I've been looking online at recipes trying to find something that would rock my world, but have been unsuccessful thus far. I need something new, heathly and fresh. My body is craving some nutrition but I just can't figure out what to give it!!

SCARVES GALORE!

Here is my current work in progress.
Hopefully I will be finished in time for Christmas.

Thankfully I have these done so far:

Everything is nice and wrapped and under my tree.

Oh Joyous Day

The joys of being a mom are endless. I have to say my son is my most favorite person E.V.E.R
.

I CAN'T BELIEVE CHRISTMAS IS ONLY 17 DAYS AWAY!

I've been busy all day today knitting presents for Christmas, I have so  many more to go but I guess some people will have to wait till next year. I've worked really hard in the last couple of months but it always seems that I don't have the yarn I want or need. It's gonna be a different this year, the first without my grandma. She was the one who taught me how to crochet, embroider and quilt. I guess it's safe to say I got my artiness from her. Although I wasn't very interested in it when she tried to teach me. Even though this will be different I'm totally looking forward Christmas Eve/ Day. With door decorating contest, Christmas parties, and the delicious food it's going to be amazing.

About Me.

This is just a little something for everyone to get to know me a little better.
Hello, I'm Courtney.

Born, raised and currently residing in Texas. I love that I'm a Texan, (and no I don't own a horse.)

I got married when I was 21 to Chris, got pregnant 7 months later, and had my wonderful son, Josiah Joel. And at 23 had our daughter Jocelyn Annabelle.
I'm currently a stay at home mom.

.Photography.
.Cooking.
.Reading.
.Painting.
.Drawing.
.Blogging.

I get bored easily, especially when I'm doing the same thing over and over. I guess that's why I have a hobby obsession. When I get bored with one thing I'll do something else for a while.

is to one day have a business or making a living doing everything that I love.
