☂Rainy days. They are perfect for creating. I always feel like baking, knitting, drinking a cup of tea, reading a good book, watching a movie(although movies are always better when I have my honey to snuggle up with on the couch), and blogging of course.
Today I'm craving some delicious muffins. I found a recipe that would be perfect, but looked in the pantry only to discover I'm out of brown sugar!!! what kind of non-sense is that! And if only I had a car I could just run up to the store and grab some. Then I would also be able to grab some eggs, which I'm also out of.☹
So my delicious muffins will have to wait for another day.

Banana Crumb Muffins
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1/2 teaspoon nutmeg
- 3/4 teaspoon cinnamon
- 3 bananas, mashed
- 3/4 cup white sugar
- 1 egg, lightly beaten
- 1/3 cup butter, melted
- 1/3 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground cinnamon
- 1 tablespoon butter
Directions
- Preheat oven to 375℉ Lightly grease 10 muffin cups, or line with muffin papers.
- In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder, vanilla, nutmeg, 3/4 teaspoon cinnamon, and salt.
- In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
- In a small bowl, mix together brown sugar, 2 tablespoons flour and 1/4 teaspoon ground cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
- Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
