WAY TO FAST

Time really does fly when you have kids. Well... it did before I had kids too, but to see such a drastic change of how much Josiah and Jocelyn have grown in the last 2 years, blows my mind. I try my best to constantly take photos and write down all the little stories of our day to day lives, looking back though I wish I would have done more. As a parent I really encourage everyone to take time to capture these tiny moments in life, cause you never get them back and they are gone in a flash. Seriously. Jocelyn is just about to turn two and Josiah has already learned to lie about his age (he tells everyone he's 5, so he can be old enough to go to school)

One of my favorite things: Peeking at them when they play together. I love to peek around corners or hide behind something and just watch/listen to them playing. I'm sure the fighting will be here and there, as it is now, but they love each other so much. They usually are trying to make each other laugh in some way. They dance together, sing together, ride bikes together, even save each other from the lava at the bottom of the slide. It truly warms my heart and makes me feel like a child again with them.

Yesterday, I didn't have my camera on me and I didn't want to miss the moment while I went looking for it but, they were outside playing together sitting on this "Sit-n-Spin" thing and grabbing each others cheeks and making funny faces on each other. Even through the closed door I could hear them belly laughing. They really are best friends. I hope as their relationship grows they will just become closer and closer.

Mommy's Little Hipsters

Josiah and Jocelyn are already so used to me taking there pictures all the time, that now they actually will come get me during their playtime if something is photo worthy. This is one of those times, Josiah came running to me yelling "Mom, get your camera, we need to take a picture of Joce!" After she had her turn (which she was THAT interested in) Josiah begged for me to take some of him too. So of course he gave me what he got. lol I was LOVING it! I don't know where he got the idea of doing that with his eyes... I'm sure it has nothing to do with him hearing me tell people "look up that way.... now look over here... wait stop look back there" haha Anyways these kids are a hoot and I love them to pieces.

My Kind of Salsa: Chili's Copycat


SUPER DUPER EASY! You have gotta try it.


Chili's Copycat Salsa Recipe:
(Recipe from Deals to Meals)

2 cans (14.5 oz each) whole tomatoes, drained
1 small (4 oz) can diced or whole jalapenos (not pickled)--about 4-5 jalapenos (or less if you don't like a lot of spice)
1/4 c. yellow onion, cut into quarters (you can also use dried minced onion)
1 tsp. garlic salt
1/2 to 1 tsp. salt (depending on how much you prefer)
1 tsp. cumin
1/2 tsp. sugar
1 tsp. lime juice

Place all of the ingredients together into a food processor or blender and puree until smooth. Serve with tortilla chips. 

I used closer to a 1/3 cup of onion and added some extra cumin :)
And served with THIN tortilla chips. Perfection!

Potty time

This morning while watching Dora, Jocelyn comes up to me and grabs my finger and tries to pull me of the couch. She was telling me something that sounded like ”get up mom, help me, Eeee” So I got up and followed her to the bathroom. Where she was trying to pulling her pants off ”Eeee”  she said again. ”Oh you have to pee” So I got her on the toilet and nothing, she sat there for a little bit, but it looked and felt like she had already gone in her diaper. A little bit later while watching TV again, she tells me again pulling on her pants. Once again I followed her to the restroom and set her on her potty. This time she went!!! She was so exited she got up and did a little dance. It was so cute. I don't know how fast she will actually potty train, but she is interested and growing so fast. I'm sure she'll be out of diapers before I know it.
